It doesÂn’t take long to learn how to pull a shot of espresÂso. Search for that phrase on Youtube, and you’ll find hours’ worth of sound instrucÂtion, most of it in the form of brief and easÂiÂly digestible videos. All of them covÂer the same basic stages of the process: grindÂing, dosÂing, tampÂing, and brewÂing. When examÂined closeÂly, each of those stages reveals a forÂmiÂdaÂble body of knowlÂedge to masÂter. If any one YoutuÂber can lay claim to havÂing masÂtered all of them, it must be James HoffÂmann, preÂviÂousÂly feaÂtured here on Open CulÂture for his videos on subÂjects from deep-fried cofÂfee to the clasÂsic BialetÂti Moka Express. In the six-part series above, he offers viewÂers an overview of all they need to know to achieve a true underÂstandÂing of espresÂso.
Episode by episode, HoffÂmann explains how to choose the right dose of cofÂfee, ratio between the amount of ground and liqÂuid cofÂfee, brew time, grind size, brew temÂperÂaÂture, and presÂsure. Of course, there is no sinÂgle uniÂverÂsalÂly corÂrect setÂting or amount of any of these things: each is a variÂable with its own range of effects on the shot of espresÂso ultiÂmateÂly yieldÂed.
Each drinker, too, has a difÂferÂent conÂcepÂtion of the taste and texÂture of the ideÂal espresÂso shot, and conÂsisÂtentÂly realÂizÂing those qualÂiÂties — or at least getÂting close — necesÂsiÂtates no small amount of triÂal and error. But those who lisÂten well to HoffÂmanÂn’s explaÂnaÂtions will sureÂly end up with fewÂer errors, and in any case get more enjoyÂment from the triÂals.

This he addressÂes in a bonus episode — unsurÂprisÂingÂly, the longest one of the bunch — which shows his entire process in detail, from preparÂing the beans to stirÂring and sipÂping. Along the way, he also introÂduces the variÂety of speÂcialÂized devices he uses: a strong draw for his many cofÂfee-gearÂhead subÂscribers, but one he presents with the caveat that you realÂly don’t need to go high-end all the way in order to live your best espresÂso life. Even so, the dedÂiÂcatÂed home enthuÂsiÂast must put in conÂsidÂerÂably more time and attenÂtion than the averÂage chain-cofÂfee-shop barista. “CafĂ©s want to make good espresÂso as quickÂly and easÂiÂly as posÂsiÂble,” he reminds us. “We want to make incredÂiÂble espresÂso every time.”
